The Green Monster a.k.a Broccoli Soup

It has just rained. I see outside my bedroom window. It is a grey foggy evening. As the weather takes a turn for the humidly cold I set forth to make some soup to warm my belly up. This has been my routine since the last two weeks. The weather has made me turn to the worse, laziness and delayed blog posts. As I see numerous bloggers sweep their blogs with 1st January posts. I lie in my bed having my hot soup while the recipes, ideas and thoughts stew in my head for a sunnier day.

I am sprung back to reality as I am awake at four in the morning anticipating my first day of my new job. I write the post to make better of my time. Soups are not as difficult as people make it to be. It is just a mix of few ingredients and that’s all. It is not fancy or complicated. It is the best way to healthily spoil yourself in the winters with some toasty bread or croutons.

I am sharing two of my favourite recipes for soups I make. Not too much, not too time consuming, just whip it up. I have four basics to my process of soup making; olive oil, a herb (basil, parsley, thyme etc), whole black pepper and salt.

The Green Monster


  1. ½ kg Broccoli cut into florets with the stems
  2. 250 gms Cauliflower cut into florets with the stems

  3. 2 cloves of garlic finely chopped
  4. 1 medium onion sized thinly sliced
  5. 1 big bay leaf
  6. 2 cups vegetable stock
  7. 2 tbsp of Parsley
  8. Salt to taste
  9. 1 tbsp of coarsely ground pepper   


  • Heat oil in a thick bottom pan.
  • Add the garlic, bay leaf and do not let the garlic brown.
  • Put in the onions and fry till they have become light brown.


  • Add the broccoli, cauliflower, vegetable stock, pepper, salt and parsley.


  • Cover till the vegetables are done.


  • Put in a blender and liquidize it finely.


  • Put it back in the pan to heat it.



Note: The cauliflower gives the soup a creamy consistency. This soup would not need milk, cream or potatoes to be rich. The cauliflower is a healthier alternative ingredient while making such kind of soups.

The One with the Tomato


  1. 7-8 medium sized Tomatoes
  2. 4 big cloves of garlic (finely chopped)
  3. 1 big bay leaf
  4. 1 tbsp of dried Basil
  5. 1 tsp of Coarsely Crushed Black pepper
  6. 1 tsp Olive oil
  7. Salt to taste
  8. 1-2 cups of vegetable stock


  1. Blanch the tomatoes. Take the skin out and liquidise in a blender.
  2. Sieve the tomatoes to take out tomato seeds.
  3. In a thick bottom pot heat oil, fry the bay leaf and the chopped garlic. Do not let the garlic brown.
  4. Pour the tomatoes and put the basil, salt and pepper and cover.
  5. After 10 minutes pour the vegetable stock till you have the soupy consistency you like
  6. Once it comes to boil, simmer and cover for about 15 more minutes.
